Gastronomy Small Ecology- empowering young people to eat better.

Our target audience are high school students leaving home to pursue higher education or a trade career.
This is a summer holiday bridging project, to equip young people with the skills to pursue a dynamic, hands on and healthy food culture in their new home.
Four programme components.
Ethical and regenerative farms tour of regional Victoria.
Regenerative farms photo-essay: capturing regenerative and ethical farming practises photographically.
Gastronomic explosion labs: hands on, making, baking, kneading, tasting: an unpacking of ideas, flavours and ethics, concluding in shared meals.
Photo-essay public exhibition, showcasing meals made and the regenerative farms underpinning those feasts.

The CSIRO's 2016 Nutrition Study of 200,000 adults found that Australians are increasingly undernourished due to an over obsession with junk food. The Cancer Council estimates that in 2010, 2600 new bowel cancer cases in Australia were associated with consuming too much red and processed meat.
Gastronomy Small Ecology is an immersive/ hands on gastronomic summer holiday education programme. Through farm tours, ingredient shopping tours, cooking, baking, fermenting and feasting we will empower young people to realise the immense joy, health benefits, pride, empowerment and deliciousness that comes with cultivating a confident and healthy home cooking culture.
